Hailing from Rome, Italy, Elena is a Certified Sommelier. She received her sommelier training and diploma at the prestigious Associazione Italiana Sommelier (AIS) in Rome. Elena has taken part in workshops all around the world and has worked in Italy, Malta and, New York. As a result, she has formidable knowledge about the world of wines.

Alasdair's passion for food and the Scottish Borders started early. By age 16 he was working full time in local kitchens honing his knowledge and skills. By 23 he opened his first restaurant in Jedburgh. In 2015 he opened The Capon Tree and secured his first AA rosette in 2019. He plans to increase on this in 2022 and aims to secure a Michelin star in the future.
